The extra sharp blade cuts beef, poultry, and pork with ease. The ergonomic handle design was developed in consultation with professional chefs and is accentuated by the fluid shape. The precision forged blade, double bolster (between the blade and the handle and at the end of handle), and tang are married to the incredibly durable Hostaform-C handle, triple-riveted to the fully-visible tang.
Wüsthof knives offer a harmonious blend of precision cutting performance, integrity of materials, safety, and comfort. The knives are hot-drop forged by hand from a single blank of high carbon no-stain steel, a specially alloyed surgical steel consisting of exacting proportions of carbon, chromium, molybdenum, and vanadium. The blades are perfectly tapered from bolster to tip, and from the back of the blades to the edges, and are honed by hand. Perfect balance is assured by an almost full extension of the tang through the length of the handle. Gapless bonding between the handle and the bolster prevents food particles from entering.

While we were excited to get our next leg of the journey underway our minds were still back at the children's home, digesting the last week and a half. After some reading, eating, and relaxing we caught a cab south to visit Durbar Square of Patan (the old city for the Newari culture). As we walked closer to the square a mean looking guard started walking towards us with a big billy club and his scary Gurkha knife...we would have to pay a 250 rupee entrance to the square or face this guy. We checked the guide book and confirmed the fee is legit and paid it. The Durbar Square of Patan, said to be the best example of Newari Architecture in Nepal, consists of a set of temples and buildings that exude the classic Nepali image we held in our imaginations. After almost two weeks in the country and seeing very little of this building style, we were now in the middle of this awesome square.
